Step 1: Prepare the Crust

Step 4: Make the Meringue
- In a clean, dry bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form.
- Gradually add the sugar, one tablespoon at a time, and continue beating on high speed until stiff, glossy peaks form.
- Spread the meringue over the lemon curd, making sure to seal the edges.
Step 5: Toast the Meringue
- Use a kitchen torch to lightly brown the meringue, or place the cheesecake under the broiler for 1-2 minutes, watching closely to avoid burning.
- Let the cheesecake cool for a few minutes before serving.
