How to Make Oatmeal Pancakes
Step 1: Prepare the Oats
If you prefer a smoother texture, blend the rolled oats into a fine flour using a blender or food processor. If you like texture in your pancakes, keep the oats whole.
Step 2: Mix the Dry Ingredients
In a large mixing bowl, combine the oat flour, all-purpose flour, brown sugar, baking powder, baking soda, salt, and cinnamon. Whisk to distribute everything evenly.
Step 3: Combine the Wet Ingredients
In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract until smooth.
Step 4: Mix the Batter
Gradually pour the wet ingredients into the dry mixture. Stir until just combined—be careful not to overmix, as this can make the pancakes dense. Let the batter rest for 5–10 minutes to allow the oats to absorb some of the liquid and thicken slightly.
Step 5: Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil. Pour ¼ cup of batter onto the hot surface for each pancake. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook the other side for an additional 2 minutes.
Step 6: Serve and Enjoy!
Serve your oatmeal pancakes warm with your favorite toppings: maple syrup, fresh berries, a dollop of yogurt, or a sprinkle of nuts.
