Vanilla Pecan Pralines: A Sweet Christmas Tradition

 

Instructions:

  1. Prepare Your Workspace:
    • Line a baking sheet with parchment paper or a silicone baking mat.
    • Set all your ingredients within reach because the process moves quickly once you start cooking.
  2. Toast the Pecans:
    • In a dry skillet over medium heat, toast the pecan halves for 2-3 minutes, stirring frequently. This enhances their flavor and adds a wonderful depth to the pralines. Set aside.
  3. Cook the Sugar Mixture:
    • In a heavy-bottomed saucepan, combine the granulated sugar, brown sugar, butter, and heavy cream. Place over medium heat and stir constantly until the butter melts and the sugars dissolve.
  4. Bring to Temperature:
    • Attach a candy thermometer to the side of the saucepan. Continue stirring the mixture and cook until it reaches 235-240°F (soft-ball stage). If you don’t have a candy thermometer, you can test by dropping a small amount into cold water—it should form a soft ball that flattens when removed.
  5. Add Pecans and Vanilla:
    • Remove the saucepan from heat and quickly stir in the toasted pecans, vanilla extract, and a pinch of salt.
  6. Cool Slightly and Spoon:
    • Allow the mixture to cool for 2-3 minutes. Then, using a tablespoon, drop spoonfuls onto the prepared baking sheet. Work quickly, as the mixture will begin to set.
  7. Let Set:
    • Allow the pralines to cool completely at room temperature until they firm up. This usually takes about 30-40 minutes.
  8. Store and Enjoy:
    • Once set, transfer the pralines to an airtight container. They’ll stay fresh for up to two weeks (if they last that long!).

  • Don’t rush the cooking process: Stir constantly and monitor the temperature closely to avoid burning the mixture.
  • Use high-quality vanilla: The pure vanilla extract makes a big difference in flavor.
  • Work quickly: Once the mixture is off the heat, it starts to set rapidly, so have everything ready before you start.
