Step 1: Prepare the Potatoes
- Wash, peel (if desired), and slice the potatoes into 1/4-inch thick rounds or cubes, depending on your preference. Keep the slices uniform to ensure even cooking.
- Place the sliced potatoes in a bowl of cold water and let them soak for 10-15 minutes. This removes excess starch, helping the potatoes crisp up nicely.
- Drain the potatoes and pat them dry with a clean kitchen towel or paper towels.
Step 2: Heat the Pan
- Heat a large skillet (preferably cast iron) over medium heat.
- Add the vegetable oil (or bacon grease) and butter to the skillet, allowing it to melt and coat the bottom evenly.
Step 3: Cook the Onions
- Add the sliced onions to the hot skillet and cook for 3-5 minutes, stirring occasionally, until they begin to soften and turn translucent.
- Push the onions to one side of the skillet to make room for the potatoes.
Step 4: Fry the Potatoes
- Add the sliced potatoes to the skillet in a single layer. Avoid overcrowding the pan to allow for even browning.
- Sprinkle the garlic powder, smoked paprika (if using), salt, and pepper over the potatoes and onions.
- Cook the potatoes for 5-7 minutes on one side without stirring, allowing them to develop a golden, crispy crust.
- Flip the potatoes carefully with a spatula and continue cooking for another 5-7 minutes, stirring occasionally to ensure all sides are evenly browned and crisp.
Step 5: Combine and Serve
- Once the potatoes are golden brown and tender, stir the onions back into the potatoes so they’re evenly distributed.
- Taste and adjust seasoning as needed.
- Garnish with fresh parsley if desired, and serve hot.
