Step 1: Preheat the Oven
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper to make it easier to remove the cheesecake later.
Step 2: Make the Double Crust
- In a mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and cinnamon (if using). Stir until the mixture resembles wet sand.
- Divide the crust mixture into two portions.
- Press one portion firmly into the bottom of the prepared springform pan to form the base layer.
- Press the other portion around the sides of the pan, creating a double layer of crust that will wrap around the cheesecake filling. Use a glass or measuring cup to pack it tightly.
Bake the crust in the preheated oven for 8-10 minutes, then remove it and let it cool while you prepare the filling.
Step 3: Prepare the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese and granulated sugar together using an electric mixer. Mix until smooth and creamy, about 2-3 minutes.
- Add the vanilla extract, sour cream, and heavy cream, and mix until well combined.
- Add the eggs one at a time, beating on low speed after each addition to avoid overmixing. If using flour, sift it in at this stage for a denser filling.
Step 4: Assemble and Bake
- Pour the cheesecake filling into the prepared crust, smoothing the top with a spatula.
- Place the springform pan on a baking sheet to catch any drips. Bake in the oven at 325°F (163°C) for 50-60 minutes, or until the center is set but still slightly jiggly.
Step 5: Cool and Chill
- Turn off the oven and crack the door open slightly. Allow the cheesecake to cool in the oven for about 1 hour—this helps prevent cracking.
- Once cooled to room temperature, refrigerate the cheesecake for at least 4 hours or overnight for the best flavor and texture.
Serving Suggestions
When ready to serve, remove the cheesecake from the springform pan and transfer it to a serving plate. For an extra touch of decadence:
- Top it with fresh fruit like strawberries, raspberries, or blueberries.
- Drizzle caramel or chocolate sauce over the top.
- Add a dollop of whipped cream for added flair.

- Room Temperature Ingredients: Ensure all your ingredients are at room temperature for a smooth, lump-free filling.
- Don’t Overmix: Overmixing can incorporate too much air, causing cracks during baking.
- Water Bath Option: If you’re worried about cracks, bake the cheesecake in a water bath. Wrap the springform pan in foil and place it in a roasting pan filled with hot water.
