How to Make Pasta Fagioli
Step 1: Cook the Protein
In a large pot, heat the olive oil over medium heat. Add the ground beef, turkey, or sausage, breaking it apart with a spoon. Cook until browned, then drain any excess fat and set aside.
Step 2: Sauté the Vegetables
In the same pot, sauté the onions, garlic, carrots, and celery until softened, about 5–7 minutes. The aroma from this step sets the stage for the deliciousness ahead!
Step 3: Build the Soup
Add the diced tomatoes, tomato sauce, chicken or vegetable broth, and seasonings (oregano, basil, red pepper flakes, salt, and pepper). Stir well and bring the mixture to a boil. Reduce the heat to low and let it simmer for 15–20 minutes to allow the flavors to meld.
Step 4: Add the Beans and Pasta
Stir in the beans and ditalini pasta. Simmer for another 10–12 minutes, or until the pasta is al dente. Be careful not to overcook the pasta, as it will continue to soften in the hot broth.
Step 5: Garnish and Serve
Ladle the soup into bowls and top with fresh parsley and a generous sprinkle of grated Parmesan cheese. Serve warm with crusty bread or garlic toast for dipping.
Tips for the Perfect Pasta Fagioli
- Make It Vegetarian: Skip the meat and use vegetable broth for a lighter, plant-based version.
- Meal Prep Friendly: Store the soup and pasta separately to prevent the pasta from absorbing too much liquid. Combine them when reheating.
- Add More Veggies: Toss in zucchini, spinach, or kale for an extra nutrient boost.
