Step 1: Prepare the Strawberries
Start by washing and hulling the strawberries. Blend them into a smooth purée using a blender or food processor. Set aside 1 cup of purée for the cake batter and ½ cup for the frosting.
Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Step 3: Cream the Butter and Sugar
In a large mixing bowl, use an electric mixer to cream the butter and sugar together until light and fluffy. This step is crucial for a moist, tender cake.
Step 4: Add Eggs and Flavorings
Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the vanilla extract and the strawberry purée until evenly combined.
Step 5: Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture in three parts, alternating with the milk. Start and end with the dry ingredients. If you’d like a more vibrant pink cake, add a few drops of red food coloring at this stage.
Step 6: Bake the Cake
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Divide the batter evenly between the pans and smooth the tops with a spatula. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Step 7: Make the Strawberry Frosting
In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition. Beat in the strawberry purée, vanilla extract, and a pinch of salt until the frosting is smooth and fluffy.
Step 8: Assemble the Cake
Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of frosting on top, then add the second layer. Frost the top and sides of the cake, smoothing it out with a spatula or knife.
Step 9: Garnish and Serve
For an extra touch, garnish the cake with fresh strawberry slices or whole strawberries on top. Chill the cake for 30 minutes to set the frosting before slicing and serving.
