Instructions
Step 1: Prepare Your Pan
Line an 8×8-inch baking dish with parchment paper, leaving some overhang on the edges to easily lift the fudge out later. Lightly grease the parchment paper to prevent sticking.
Step 2: Mix the Peanut Butter Base
In a microwave-safe bowl, combine the peanut butter and sweetened condensed milk. Microwave on high for 1 minute. Remove from the microwave, stir, and heat for an additional 30 seconds if the mixture isn’t fully melted and smooth.
Step 3: Add the Vanilla and Sugar
Stir in the vanilla extract. Gradually sift the powdered sugar into the peanut butter mixture, stirring well after each addition. The mixture will become thick and slightly stiff as the sugar is incorporated.
Step 4: Transfer to the Pan
Pour the mixture into the prepared baking dish. Use a spatula to spread it evenly and smooth the top. If desired, sprinkle your choice of toppings over the fudge and press them lightly into the surface.
Step 5: Chill and Set
Place the dish in the refrigerator and let the fudge chill for at least 2 hours, or until firm.
Step 6: Slice and Serve
Once set, lift the fudge out of the pan using the parchment paper overhang. Slice it into small squares and serve. Store any leftovers in an airtight container in the refrigerator for up to a week.
Tips for Success
- Choose the Right Peanut Butter: Stick to classic creamy peanut butter for the smoothest texture. Natural peanut butter may cause the fudge to separate due to its higher oil content.
- Sift the Sugar: Sifting powdered sugar prevents lumps and ensures a silky fudge consistency.
- Customize the Flavor: Add a pinch of sea salt to balance the sweetness or a teaspoon of cocoa powder for a hint of chocolate.
- Get Creative with Toppings: Sprinkle crushed pretzels, coconut flakes, or mini marshmallows for added texture and flavor.
- Double the Batch: This fudge is so addictive that you might want to make a double batch if you’re serving a crowd!
