Method
Step 1: Prepare the Apples
- Peel, core, and slice the apples into even pieces, about 1/4-inch thick. Toss the slices with lemon juice in a large bowl to prevent browning.
Step 2: Make the Syrup
- In a large pot, combine the granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and cloves. Whisk to mix.
- Add water and stir until smooth. Cook over medium heat, stirring constantly, until the mixture begins to thicken and bubble.
- Reduce the heat to low and simmer for 2 minutes, continuing to stir.
Step 3: Combine Apples and Syrup
- Add the prepared apple slices to the pot, stirring to coat them evenly in the syrup. Simmer for 3-5 minutes, just until the apples begin to soften slightly.
- Remove from heat and stir in vanilla extract (if using).
Step 4: Store the Filling
- If using immediately, allow the mixture to cool slightly before using it in your favorite recipes.
- For Freezing: Let the filling cool completely, then transfer it to airtight freezer bags or containers. Store in the freezer for up to 6 months.
- For Canning: Ladle the hot apple pie filling into sterilized mason jars, leaving about 1/2 inch of headspace. Wipe the rims clean, seal with lids, and process in a water bath canner for 20 minutes. Let the jars cool completely before storing in a cool, dark place for up to a year.
Tips for Success
- Choose the Right Apples: Use a mix of tart and sweet apples for the best flavor. Granny Smith, Honeycrisp, or Fuji are excellent choices.
- Consistency: Adjust the thickness of the syrup by adding a bit more water or cornstarch as needed.
- Customization: Add a pinch of allspice or ginger for a unique twist, or reduce the sugar for a less sweet filling.
