Instructions
Step 1: Sauté the Vegetables
- Heat the olive oil or butter in a large pot over medium heat.
- Add the chopped onion, celery, and garlic. Sauté for about 5 minutes until the onion is translucent and the celery softens slightly.
Step 2: Add Potatoes and Broth
- Add the diced potatoes to the pot and pour in the broth.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for 15-20 minutes, or until the potatoes are tender.
Step 3: Blend the Soup
- Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, transfer the soup to a blender in batches and blend until creamy. Be careful as the soup will be hot!
Step 4: Add Milk or Cream (Optional)
- Return the soup to the pot (if using a blender). Stir in the milk or cream for extra richness and adjust the seasoning with salt and pepper to taste.
Step 5: Serve and Garnish
- Ladle the soup into bowls and garnish with fresh parsley. Serve hot with crusty bread or croutons for a complete meal.
